Grass-Fed Beef Burger with Bacon-Jalapeño Mayonnaise

There’s no better way to say farewell to summer than with an epic burger. Some of the best have a “secret sauce,” so we whipped up a savory, punchy Bacon-Jalapeño Mayonnaise that has just enough kick to keep you coming back for more. Our grass-fed beef is on the lean side, so to avoid a dry burger, we add egg yolks and plenty of nicely caramelized onions. These burgers are easy to make on a stovetop, but our favorite way to cook them is outdoors over an open flame (see Note) — the fire lends a layer of smokiness, and gives us a feeling of connection to the elements. Serve the burgers on your choice of bun with lettuce, avocado, thinly sliced red onion, and peak-season tomatoes.

Ingredients

  • 1 tablespoon unrefined avocado oil
  • 2 cups small-diced yellow onion (1 large onion)
  • 1 ½ tablespoons minced garlic (about 5 cloves)
  • 1 to 2 tablespoons minced seeded jalapeño pepper (1 to 2 medium peppers)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 pound ground grass-fed beef
  • 3 medium egg yolks
  • 1 ½ teaspoons fine sea salt
  • ½ teaspoon freshly ground black peppercorns
  • Bacon-Jalapeño Mayonnaise (recipe linked above), for serving

Instructions

  1. In a large cast iron skillet, heat the oil over medium heat. Add the onion, garlic, jalapeño, chili powder, and cumin and sauté until the onion is soft and begins to caramelize, 8 to 10 minutes. Scoop the vegetables into a medium bowl and refrigerate to cool, about 10 minutes. Wipe out the skillet and reserve it for cooking the burgers.
  2. Preheat the oven to 375°F and position a rack in the middle.
  3. Nestle a wire rack into a medium baking sheet. Place the ground beef in the bowl and add the cooled onion mixture. Add the egg yolks, salt, and pepper and mix thoroughly to combine; the mixture will be moist and soft. Divide into four equal parts and shape into ½-inch-thick patties.
  4. Place the skillet over medium-high heat and sear the burgers for 3 to 4 minutes per side. Using a spatula, transfer the burgers to the wire rack and place the baking sheet in the oven. Bake the burgers for 10 to 12 minutes or until the internal temperature reaches 160°F on an instant-read thermometer. Remove from the oven and let them cool for 5 minutes.
  5. Serve the burgers hot with the Bacon-Jalapeño Mayonnaise and any desired buns and toppings.

Notes

Note: To cook the burgers over an open fire, preheat your cast iron pan for 5 to 10 minutes. Add the burgers and cook until both sides are nicely browned and the meat is cooked through and an instant-read thermometer registers 160°F, 8 to 10 minutes per side.
