Arctic Star Nectarine and Mint Spritzer

Arctic Star nectarines are known for their sweet and juicy white flesh. They ripen early in the summer season and are delicious eaten out of hand, dried, or used for baking. Here, we’ve blended them into a light and refreshing mocktail that’s also flavored with lemon, mint, and honey. We love to use creamy wildflower honey because it has a perfumey aroma that pairs so nicely with the nectarines, but feel free to substitute with what you have available. Likewise, if you can’t find Arctic Star nectarines, other varieties will stand in nicely.

Ingredients

  • 1 pound Arctic Start nectarines (about 6-7 small), pit removed and chopped
  • ⅓ cup lemon juice (2 medium lemons)
  • ⅓ cup loosely packed mint leaves
  • ¼ cup raw creamy wildflower honey
  • 4 cups sparkling water
  • Ice to serve
  • 4 mint sprigs, to garnish

Instructions

  1. In the bowl of a blender, combine the nectarines, lemon juice, mint, honey and 2 cups of the sparkling water. Blend on high for 1 minute.
  2. Set a fine mesh strainer over a large bowl or pitcher. Pour the mixture through the strainer, using the back of a spoon to help push through the liquid. Dispose of the solids.
  3. Fill four glasses with ice. Divide the drink evenly between the glasses. Add ¼ cup of sparkling water to each glass and garnish with mint. Serve immediately.
